Seiki Yamada's story is fascinating. Seiki is the business partner and chef of Seiki Sushi.
Seiki was born in the south of Japan in the province of Fukuoka, on the island of Kyushu, where he spent his youth. Seiki graduated from the Nakamura culinary school.
He then started working at a Sushi restaurant in Tokyo, in the famous Tsukiji area, where he became a Sushi chef. After several years in Tokyo, he returned to his native Kyushu to start a specialization in food decoration at the Fukuoka Fashion Institute.
After graduating, he began publishing his recipes in the Japanese cooking Clim magazine and Japan's Food Channel. Seiki recipes were exclusive, with ingredients from all over the world, dishes such as American hot dogs with Japanese "Kimpira," Mexican tacos with Teriyaki chicken, or Salmon Sashimi with Italian basil paste; creating a very casual and delicate style for the Japanese palate.
Seiki continued his successful career as a chef in the United States. He lived in different cities and worked as a chef in several prestigious restaurants.
People often ask him, why does a successful Japanese chef end up living in Colombia? The answer is simple, a friend in New York City convinced him that Japanese food did not have an optimal presence in some parts of Latin America like Colombia.
His partners, knowledgeable in the gastronomic world, saw a great opportunity in Latin America. Knowing his creativity and Seiki's extraordinary talent in preparing the most traditional Japanese dishes and creating new experiences for the palate, they developed a plan to bring his unique talent to Latin America.
